The fatty acid group in Acinetobacter calcoaceticus emulsan was modified by using different carbon sources. The major components of the fatty acid group were 3-hydroxydodecanoic acid (3-HDDA), hexadecanoic acid, and octadecenoic acid. Among these, 3-HDDA was found to have the most important influence on the emulsifying activity of the emulsan.
