본 발명은 프로토파낙사디올(protopanaxadiol, PPD) 또는 프로트파나키사트리오르 합성 효소(protopanaxatriol, PPT) 계의 진세노사이드 20위의 탄소에 위치한 하이드록실기에 대해서 당전이 활성을 가지는, 우리딘 이인산(UDP)-당전이 효소(uridine diphosphate glycosyltransferase) 단백질 및 그것을 이용한 UDP-당전이 방법에 관한 것이다.
